Lunchables were a real treat in our home when I was growing up. Anyone else with me? I mean, seriously, who wouldn't love their very own DIY cheese and cracker sandwiches or cold pizza and a special dessert?

When recently trying to think outside the proverbial lunch box, my childhood favorite came to mind. I gave it a few Paleo tweaks and this deliciousness resulted.
Paleo Lunchable
Applegate farms turkey and ham cut into squares
Organic full fat cheeses cut into squares
Sliced cucumbers in place of crackers (not pictured)
Side of veggies
Optional treat: square of dark chocolate
One word of advice - you do want to keep your meats and cheese compartmentalized. They travel much better that way.
The best part is you can pack this lunch for adults and kids alike. After all, we're all kids at heart, right?
Of course, tweak your lunchable any way you please. Here are a few ideas:
BLT
Italian (pepperoni/salami)
Paleo coconut or nut crackers
zucchini or carrot chips as crackers
bell pepper squares as crackers
Paleo cookies
If you'd like to include condiments, I recently purchased these disposable souffle cups at Amazon and they're working out well.
This quick and easy lunch has definitely earned a spot on our weekly rotation. I'll post a few more examples as I make this lunch in the coming weeks.

I love this idea!! Yup, I too grew up with lunchables. I never cared much for the cold pizza, but I was hooked on that thick sliced balogna and cheese!
