Cinnamon & Green Apple Mug Muffin (21DSD Day 5)

 

I owe you a day 4 post, but I'm too excited to share this recipe with you. I created this 21DSD dessert today (Day 5) and it was exactly what we were in need of. Day 4 and 5 have been more challenging. We haven't been feeling great with cold like symptoms and lots of fatigue. I know we'll be over the hill soon though!

Cinnamon & Green Apple Mug Muffin

You'll see that I have a tag for "Mug Creations" on the side bar. I'm a huge fan of these quick and easy recipes. Whether it's a late week night or a busy weekend, working professionals don't have a lot of time to spare. This tasty mug creation cooks in minutes in the microwave. This is easily a great breakfast or dessert item.

Cinnamon & Green Apple Mug Muffin

Ingredients (serves 2)
  • 1 green apple, peeled & diced
  • 1 tablespoon salted grass fed butter or ghee, melted
  • 1 egg
  • 1/4 cup + 1 tablespoon coconut milk or water
  • 3 tablespoons coconut flour
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon pure vanilla extract
  • 1/2 teaspoon baking powder
Instructions
Place peeled & diced apple in a microwave safe dish, cover with a damp paper towel & microwave for 90 seconds, remove and sprinkle with a little cinnamon
In mug or ramekin, add egg, vanilla and coconut milk or water & whisk or stir with a fork
Slowly drizzle melted butter into the egg mixture while continuing to whisk or stir with a fork
Add baking powder and cinnamon and stir
Add coconut flour one tablespoon at a time and continue to stir
Stir in about half of the cooked apples (add as little or as much as you please)
Microwave for about 2 minutes 30 seconds (my microwave is very strong, it may take a few seconds longer)
Carefully remove from microwave and invert on a cooling rack
Slice into quarters, top with grass fed butter and remaining cinnamon apples
*feel free to add a tablespoon of maple syrup to this recipe if you are not detoxing!

Leftover rotisserie chicken with a spinach salad and leftover Easy Healing Chicken Soup

 
Dinner
 
Slow cooker pork loin (season, add onions, cook on low for 6-7 hrs), spinach salad, pan fried eggplant with bacon, and rice (for the beau only)

  1. Is there anything I can substitute for the egg and still make this work? I can't eat egg and I'm running into egg in many 21dsd recipies.

    Hi Jill - although I haven't tried the recipe with an egg substitute, I found some alternative options for baking on this site: http://www.paleoplan.com/2011/10-14/3-ways-to-cope-with-an-egg-allergy/

    -2 Tbsp arrowroot
    -1 tsp baking powder + 1 ½ Tbsp water + 1 ½ Tbsp oil
    -1 Tbsp tapioca + ¼ c warm water
    -2 Tbsp applesauce
    -”Flax Eggs” – 1 Tbsp flax + 3 Tbsp water, let sit to gel for 5 minutes. Whisk.
